How can I help YOU?

  • If you find yourself preoccupied with food, unsure of what to eat or when, you’re trying so hard to control your eating habits and you feel frustrated and exhausted, I can help you find food freedom. We can discuss in depth how to eat and combine foods to fuel your body so you can look and feel your best. When you learn to fuel your body appropriately, you will no longer be consumed by constant thoughts about food. You will be able to reach your previously unattainable goals in a healthy and sustainable way.

  • If you are feeling stuck, confused, lost, and hopeless with weight loss; you are tired of losing weight and then gaining it back…like you are doing everything you know how, but not seeing any results…I can help. I am interested in helping you lose weight sustainably by creating healthy habits. Diets don’t work in the long term, so we will focus on creating habit change that will create lasting results and a positive relationship with food and your body!

  • If you are in a cycle of restricting and binging, feeling guilty and then repeating…I know that you feel miserable. I can help you break the cycle by working with you to identify trigger, raise your stress set point, and create behavior change. We will work to:

    1. physically balance blood sugar by consistently eating enough protein and calories throughout the day

    2. psychologically addressing the stress that triggers binging

If you struggle with Binge Eating Disorder, I recommend a multidisciplinary approach and will refer out to a therapist and other professionals as needed.

  • Many conditions can benefit from elimination diets including: GERD, digestive problems, headaches, chronic low energy, mood swings, skin irritations, and joint pain.

Basically, an elimination diet is a dietary approach that involves removing certain foods or food groups from your diet for a period of time and then systematically reintroducing them to identify any potential food sensitivities or allergies. The purpose of an elimination diet is to pinpoint the specific foods that may be causing adverse reactions or symptoms in your body.

Here's a general overview of how an elimination diet is typically conducted:

    1. Elimination phase: During this phase, you'll eliminate specific foods or food groups that are commonly associated with food allergies or sensitivities. Common culprits include dairy products, gluten-containing grains, soy, eggs, shellfish, nuts, and certain fruits and vegetables. You'll follow this restricted diet for around 3 weeks.

    2. Reintroduction phase: After the elimination period, you'll gradually reintroduce the eliminated foods back into your diet, one at a time, while closely monitoring your body's response. This phase helps identify which foods may be triggering adverse reactions. Oftentimes, those foods can be avoided for a longer period of time and reintroduced successfully once the gut has had an opportunity to heal.

    3. Personalized diet plan: Based on the results of the elimination and reintroduction phases, you can develop a personalized diet plan that eliminates or reduces the intake of specific foods that trigger adverse reactions. This plan can help improve your overall well-being by reducing symptoms and optimizing your nutritional intake.

I will provide personalized advice and ensure proper nutrition during this entire process.

  • Polycystic ovarian syndrome is a condition that is improved by weight loss and exercise. However, weight loss is a challenge due to the condition. I love helping women manage their PCOS symptoms through good nutrition and physical movement.

  • Going through menopause is a challenging time with changing hormones that cause weight gain, mood swings, changes in sleep, hot flashes, etc. The good news is that nutrition can make a huge difference in how you feel! I can help you navigate this time period and help you look and feel your best!

  • Let’s work together to lower your blood glucose and A1C so that you stay away from developing Type 2 Diabetes. When we meet together, we will look at your labs, discuss the science of blood sugar regulation, and then work together to implement changes that can reverse your pre diabetes. It is so rewarding to do the work and then get follow up labs!

  • As a dietitian specializing in ADHD, I can assist in creating personalized strategies to support needs. By evaluating your current diet, I can help you emphasize nutrient-dense, high-quality foods to stabilize energy, improve focus, and ease your ADHD symptoms. You’ll learn how to regulate blood sugar levels, manage the impact of sugar and additives, and incorporate essential nutrients like protein, fiber, and omega-3s for optimal brain and gut health. Whether addressing disordered eating patterns, co-existing conditions, or physical activity goals, this holistic approach will empower you to make sustainable lifestyle changes for enhanced well-being.

  • ARFID is an eating disorder that stands for Avoidant/Restrictive Food Intake Disorder. People with ARFID have rigid and restricted eating habits, but they aren’t trying to lose weight. It is a mental condition that goes beyond picky eating.

Treatment for ARFID is best treated by a team- a doctor, a therapist, and a dietitian.

As a Registered Dietitian, I can help with:

Nutritional Assessment & Meal Planning – Identify deficiencies and create balanced meal plans.
Food Exposure & Sensory Strategies – Introduce new foods gradually and modify textures to suit sensitivities.
Behavioral & Emotional Support – Provide coping strategies, structured routines, and collaborate with therapists.
Family & Caregiver Education – Guide mealtime approaches to encourage stress-free eating.
Supplementation & Medical Coordination – Recommend supplements and work with healthcare providers.

With a personalized, step-by-step approach, I can help individuals with ARFID build a healthier, more varied diet.

  • If you get your labs back and find out you are flagged with high cholesterol or high blood pressure, I can work with you to lower your levels with nutrition. This is an area where food definitely can act as medicine. As you work to lower these markers of heart health, you may notice other changes too like having more energy and feeling great! Good nutrition makes a world of difference!

Here’s what my clients are saying…

Courtney is the Dietitian that NWA needed, and desperately!! Courtney not only has compassion and love for all of her patients, she has the knowledge in nutrition! She will help you reach goals that you didn’t think possible. The guidance she provides along with the education in nutrition is top notch! The level of care cannot be measured! Whether it’s weight loss you’re struggling with or you’re wanting to focus on a healthy lifestyle change, Courtney is THE Registered Dietitian for you!
— Marla C. Richards
After I had my second baby, I felt SO lost on diets and nutrition. There was an overload of information surrounding me, all speaking as if they were truth - even though they were conflicting. Courtney at the time was in school for dietetics. She introduced me to an amazing dietitian, and then once she was ready she took over and has been the amazing dietitian in my corner ever since. I can’t emphasize enough how freeing it is to have an ACTUAL expert in your corner helping you understand how to fuel your body for energy AND get results that you’re wanting. I will never go back to Netflix documentaries and instagram fitness models being my source for nutrition advice.
— Rifka Jensen
Courtney is a true professional and really knows what she is talking about! She also leads from her heart and has amazing intuition. She is able to really individualize the plans for each client. She helped me heal from years and years of a binge eating disorder in just a few months and I’ve been able to lose 40 pounds so far and still going. I’m so thankful for Courtney and her heart and knowledge. Her willingness to learn and incorporate new things is unmatched.
— L.C.
I had the best experience working with Courtney as my dietitian. As cheesy as it sounds it really was life changing. She helped me narrow my focus to the most important things, which made all the difference and I hadn’t been able to do that on my own. And plus, our check in sessions doubled as therapy! I can’t recommend her enough.
— Kallie
I can’t say enough good things about what Courtney has helped me with. I was feeling stuck, unmotivated, and overwhelmed with all the different and conflicting information out there about weight loss. I took a leap of faith and decided to work with Courtney. I knew right away that she was extremely knowledgeable and had a passion for nutrition - it was evident from our first meeting! Courtney equipped me with so many tools, some I didn’t even know I was in need of, that helped me get out of that slump I was in. The accountability, realizing that I really was capable of meeting my goals, changing my outlook on food, making changes in my habits, and knowing how to make all those changes when my life was in chaos was the best thing I have done for my overall wellbeing. I know the things Courtney taught me are things that are 100% sustainable and not a “flash in the pan,” trendy, quick weight loss plan. She is wonderful and I highly recommend, and encourage, anyone needing to make changes in their weight to work with Courtney!
— Elizabeth
Courtney is incredible!!! Super kind and friendly, the whole visit I felt welcomed, heard, and encouraged!!
— Erin
I loved working with Courtney! Not only is she warm and welcoming but you end each meeting also feeling encouraged. My experience with her was informational, successful, positive and empowering!
— M. P.
Courtney is a professional in every way! She treats you as if you’re the only client she works with and answers any questions you may have. Having a detailed plan that shows you what to do and why is very helpful. I appreciate all the handouts she gives to help keep you on track and be accountable for the food you eat. I would highly recommend working with Courtney!
— Alene
I felt heard, non judged, safe to say anything. I liked how down to earth she felt, I liked her suggestions and I feel over time I can really earn something from these sessions.
— J. R.
I love Courtney! She answers all my questions and is very knowledgeable! I have confidence that I’ll hit my nutritional goals with her! I look forward to forward to my visits!
— C.S.
